In the quaint villages of Italy, where resourcefulness was a way of life, Italian Nonna's held a time-honored tradition of never letting anything go to waste. In their kitchens, scraps of pasta dough were carefully saved, collected, and transformed into something truly special—the Grattini Pasta. Literally translating to "grated pasta," Grattini Pasta was born from the ingenuity and creativity of these Italian matriarchs. Using a box grater, they would shape the scraps of pasta dough into small bits, reminiscent of pastina pasta. These tiny, flavorful morsels became a beloved addition to soups, stews, and salads, adding texture and depth to every dish.
